Baked Apple Pancake Souffle
Serves: 4 people
Ingredients:
1 cup plus 2 tablespoons all purpose flour
3 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
6 large eggs or two cups egg substitute
2 cups milk
1 teaspoon vanilla extract
2 tablespoons unsalted butter
6 apples, peeled and thinly sliced
3 tablespoons firmly packed light brown sugar
Steps: Preheat oven to 425
° .
In large bowl combine the first four ingredients. Make a well in the center and add the eggs, milk and vanilla.
Whisk until combined.
Place butter in a 13"x9" baking dish, place in the oven until butter is melted and sizzling, about 3 minutes.
Add the apples and mix gently to coat. Pour the egg mixture over the apples and sprinkle with brown sugar.
Bake until puffed and golden, about 35 minutes (a knife inserted in the middle should come out clean. Serve immediately.
